The Trough: Grilled Buffalo Chicken with Celery Salad

Is there anything better than buffalo wings? Seriously! Even when I was a vegetarian, (more like a “flexatarian”), buffalo wings were my weakness. The sauce, fried or baked, the blue cheese, even the little celery pieces! AMAZING! I could write a full post on who has the best buffalo wings in Minneapolis, but this is a blog about healthy food and healthy choices. It’s not about bar wings (Tiffany’s Sports Lounge), or pizza shop wings (Parkway Pizza), or honorable mentions (William’s Peanut Bar). It’s about being real and eating food that you like, but making it healthy. I found this little cookbook in the grocery aisle. Right in between Kim Kardashian and Princess Kate. I’ve made quite a few things now that it’s grilling season and almost all of them have turned out GREAT!

So you say you like buffalo wings and summer food. Here you go, and remember I tried to make this healthy(er) by cutting down on some of the quantites: Assemble:

  • 2 ounces blue cheese (about 1/2 cup)
  • 6 tbsp sour cream (I used only 4)IMG_1171
  • 1/4 cup mayonnaise (I didn’t even use that much)
  • 1 tbsp cider vinegar
  • 1/4 tsp celery salt
  • 9 celery ribs (sliced thin)
  • 1 cucumber (peeled, seeded and sliced thin)
  • Salt and Pepper
  • 1/2 cup hot sauce (I used Frank’s Buffalo Wing Sauce)
  • 4 tbsp melted butter (I didn’t use that much. MAYBE 3?)
  • 4 6-oz chicken boneless, skinless chicken breasts

Combine blue cheese, sour cream, mayonnaise, vinegar, and celery salt in a bowl.  Toss celery, celery leaves, and cucumbers with half of dressing in a second bowl to combine and season with salt and pepper to taste. Set aside remaining dressing.

Whisk hot sauce and butter together in third bowl.  Toss breasts with half of hot sauce mixture in fourth bowl.

Grill breasts over hot fire until meat registers 160 degrees, 5 to 6 minutes per side.

Transfer breasts to platter and brush with remaining hot sauce mixture.
